Thai green vegetable curry

 serves 1

Ingredients

1 small chopped onion

1 clove garlic

1 tbsp Thai green curry paste

150 ml vegetable stock

1 small sliced courgette

60g fine green beans

60g peas

t tbsp desiccated coconut

150ml milk - i used semi skimmed

 The recipe includes tsp of soy or fosh sauce but I left this out

chopped basil or coriander


Methos

Fry onion suntil softened.

Add chopped garlic and curry paste - cook for a minute

Add stock and bring to the boil

Add courgette, beans and peas simmer for 5 mins

Stir in cocomut, milk and fish sauce 

cook gently till the vegetables are as you like them

Stir in coriander or basil
