I always think rhubarb buds look like little brains. I had a really big rhubarb patch at the allotment and it's something I miss.

ReplyDeleteIt is the stems that are eaten, Endah. It can be very sour and is stewed with sugar to taste, It can be used in all sorts of ways bit mainly in pies and crumbles as a dessert. I've also mixed it with pork to make burgers. I've used it to make a sauce to have with pork and also in muffin recipes.

DeleteI started to force my Glaskin's rhubarb a couple of weeks ago to see if it would make the stems pinker. I know it's supposed to make the plant weaker but it's huge and very vigorous until late November so I don't mind if it's knocked back a bit! I'd love to stand in a rhubarb shed in the dark and listen to the stems popping and growing.
ReplyDeleteMust admit we don;t force our rhubarb, Caro but we have some stewed on the freezer that means we have some whenever we want.
