I know it's supposed to make the plant weaker but it's huge and very vigorous until late November so I don't mind if it's knocked back a bit! I'd love to stand in a rhubarb shed in the dark and listen to the stems popping and growing. It can be v...It is the stems that are eaten, Endah. It can be very sour and is stewed with sugar to taste, It can be used in all sorts of ways bit mainly in pies and crumbles as a dessert. I've also mixed it with pork to make burgers.
