A summer treat - strawberry muffins and elderflower cordial

Each week I receive an email newsletter from the Good Food website with suggestions for seasonal recipes. A week or so ago the focus was on strawberries, A recipe for strawberry and white chocolate muffins jumped out from the screen and so I decided to check the recipe.

In the end I decided to steal the idea and make up my own recipe loosely based on the one I use for rhubarb crumble muffins.

A batch was made yesterday. Sitting in the summer house we enjoyed one or two (or possibly three - four in Martyn's case) with the elderflower cordial that Martyn made using flowers from the plot.
Some weren't very big so maybe I should have just made nine instead if twelve. Guess who had the small ones.
The recipe that I came up with is available on my website here

Read about Martyn's elderflower cordial here and here on his blog

  4. They look gorgeous, but I have so much elder in the garden it's hard to keep on top of it....in the 18th century, I have read that elder flowers were fried in batter, it is a really good food source but it grows like weeds. Fab post.xxxx
